MAJA BLANCA AND AFRITADA

About three weekends ago, Vince organized a small gathering with his co-residents.  The theme was a cultural potluck dinner, so the idea was to bring a cultural dish, whether appetizer, entree or dessert.  Vince showcased his Pinoy cooking skills by bringing Chicken Afritada for entree and Maja Blanca Maiz for dessert.

Chicken Afritada

If you're Pinoy, you know that Chicken Afritada is a delicious chicken stew cooked with tomato sauce, potatoes, carrots, bell peppers and green peas.  Normally, I also put hotdogs when cooking this dish, but due to dietary restrictions for some of Vince's co-residents, we omitted that in the ingredients.

Maja Blanca Maiz

Maja Blanca Maiz is coconut corn pudding.  As the name says, it is a dessert made of coconut milk, condensed and fresh milk, flour, sugar and corn.  We then toasted grated coconuts for garnish.

We are fond of doing cultural dinners primarily because majority in his residency program are IMGs (International Medical Graduates), so that allows us to sample various cuisines on such gatherings.  Other dishes in the recent dinner included Joloff Rice, Cherry Cheesecake, Goat Curry with Basmati Rice, Tandoori Chicken, Pastelon and Ripe Plantains, Vegetable and Chicken Samosa, and Pumpkin Cake.  For the first time in his life, Vince ate goat and he actually liked it.  As for me, I tried every food on the table but I stuffed myself mostly with the Chicken Afritada that Vince cooked.  Of course, love your own, woohoo!

  2. Alam mo ba ate KM na gusto kong matutong magluto ng Maja Blanca. Wala kasi akong talent pagdating diyan eh. :P Cakes and pastries lang ako medyo may alam.

    1. you don't need talent to make maja, algene. basta marunong ka mag follow ng recipe instructions, okei na. super easy lang 'to gawin. if you want, i can share you the recipe ;) ako naman eh hindi pa ata nag-try mag bake ng cake, kaya dapat matutunan ko yun. turuan mo nga ako, al :)

  3. Just made maja blanca a few days ago for our merienda and I am planning to make one tomorrow for Bren's 40th birthday...

    Yeah, Bren is turning 40 tomorrow and he is in denial about it... Hehehe

  5. We had potluck dinners like that organized in my previous workplace and the idea is just fabulous. As NZ is basically a multi-cultural country, we all have different backgrounds. Sarap ng spread - I remember Kiwi, Moroccan, Scottish, Croatian, Mideastern, Taiwanese, oh the list goes on and on and on. I brought adobo, as you well know, one can never get it wrong with adobo :-) Parating gusto ng non-pinoys.

    2. Lainz and KM, na curious ba kayo? Hahaha...Hindi kasi mostly yung mga nagluluto ng maja, coconut milk at flour ang gamit, ako never naglalagay ng coconut milk, pure milk ginagamit ko...it's either condensed milk and fresh milk or condense and evaporated milk or yung bear brand na sterilized. Hindi din ako gumagamit ng flour, corn starch ang gamit ko. Sa flavoring, cream style corn ang gamit ko hindi yung buo buo na mais. Sa garnishing naman, grated cheese na madami ang nilalagay ko. wala akong sukat sukat. Tantyado ko na kasi sa sobrang dalas ko magluto. Hahaha. Minsan hinahaluan ko din ng vanilla flavoring.

    3. cornstarch din ang gamit ko, kriz, saka cream style corn din, kasi naman lalo na dito parang ma-to-toxic ako magkayod ng mais, and that is, seasonal din ang mais, di ba? kaya instant na lang yung nasa lata! hehe. pero nilalagyan ko pa din ng coconut milk saka condense/evap milk din ;) ma-try nga lagyan ng vanilla sa sunod na luto ^^ salamat sa tip!

      OO Krizz, sobrang na-curious ako. Alam mo naman ako, trying hard cook. Wala nga lang opportunity magluto sa ngayon, wala rin akong paglulutuan.

      OO nga naman ano? Never pa kasi ako nakapagtry magluto neto pero sa pagkakaalam ko coco milk nga nilalagay ng karamihan. Bonggang tip nga yan from you, Krizz. Sigurado ako, WINNER yang recipe mo na yan.

      Next na luto mo, Karen, subukan mo yong secret recipe ni Krizza na di na secret ngayon, LOL!

  12. Daming nagsasabing madali lang gawin ang Maja Blanca, pero never ko pa ito na-try gawin... I love this if it has lots of corn kernels. :)

    We normally put hotdogs on our Chicken Afritada, too! Love how the dishes were presented, by the way.

      and yes, we were going to a party kasi that's why we have to put the food in presentable dishes. otherwise, kung sa bahay lang yan at kami lang kakain, as in walang ka-plating plating yan, and bara bara iPhone shot na naman yan. lol.

  23. The Goat Curry with Basmati Rice got to me...my family used to cook goat (we had some at the farm), and it tasted different, but i liked it. :)

  28. That looks so delicious! It has been a while since I made chicken afritada. I used to make this a lot. I have never mad maja blanca before though as I am not such a fan. I don't know why. But those look really good. :)
